My Chocolate Chip Cookies

It's about time!

This is my all-time favourite chocolate chip cookie recipe.

A previous version of it was given to me by my Chef in culinary school, and with time it changed, it grew, and now I'm finally sharing it with you!



| Ingredients:

230 g room temperature OR brown butter

350 g light brown sugar

2 large eggs

1 t vanilla extract

425 g AP flour

4 g baking soda

5 g kosher salt

360 chocolate chips / bittersweet chocolate, chopped



| Procedure:

In a mixer fitted with the paddle attachment cream the butter and the sugar.

Preheat the oven to 350 degrees.

Once the butter batter is light and fluffy, add the eggs one at a time.

Add the vanilla extract.

In a separate bowl, mix the flour, baking soda, salt and chocolate.

Add it to the mixer and mix only to form dough.

Use an ice cream scoop, and scoop the dough onto sheet pans lined with parchment paper.

Make sure you're keeping at least 2 inches between the cookies.



| Before you Bake:

Here's why I think these cookies are the best, of course you don't have to do it but I like to sprinkle some coarse salt on top of the cookies before baking them. I think it really brings out the flavour and takes it to the next level.

Bake the cookies for 14 minutes in an oven preheated to 350 degrees.

I like my cookies soft in the centre and just a hint of browning, but if you want to you can bake your cookies a little longer.
